Spooky Sugar Cookies

I love a good sugar cookie. The soft, buttery goodness is the reason I find these babies so addicting. This spooky version of the famous Christmas cookie is just as festive! And you‘ll get to enjoy this staple treat sooner rather than later. 




Sugar cookies are SIMPLE. You most likely have the ingredients already. This recipe in particular has 7 ingredients, including the best secret to a delicious cut-out cookie: almond extract.




Ghosts, pumpkins and skulls-- oh my! Jack is my baker buddy. This kid LOVES to help me bake. And I adore him for it! I was instantly proud the moment he asked to eat the dough because #duh. We love cookie dough in this household.


Funny enough we never finished frosting our cookies this year! We were so antsy to eat them that half the batch is gone already. Above you'll see a last years finished product ;)

Spooky Sugar Cookies

3 cups flour
1 tsp salt
2 teaspoons baking powder
1 cup granulated sugar
2 sticks unsalted butter, cold & cut into cubes
1 egg
1 tsp pure vanilla
1/2 tsp almond extract

1. Preheat oven to 350
2. In a bowl of a stand mixer or with a hand mixer, blend the sugar and butter for 2 min. Add the egg, vanilla and almond and mix until incorporated. 
3. Gradually add the flour, salt and baking powder until combined. Do not overbeat.
4. The dough may be crumbly but you can use your hands to combine all the dough into a ball. Place dough in fridge for 30 minutes so the flavors can set. 
5. Transfer dough to a floured surface and roll out to about 1/4 in thick. Cut into shapes and transfer to cookie sheet. Bake 7-8 mins. 
6. Let cookies sit for 2 mins until transferring to a cooling rack or hard surface. Let cookies cool completely before decorating.

Or in our case just eat them as they cool because you simply cant resist.
