May Goals

Taking a tip from the goal-guru herself, Lara Casey, and creating space for this month to be about the essentials. Compared to past months my tending list for May is brief! This is an intentional reminder for me to hone in on some goals I want to see come to fruition. 

Likewise in my own backyard garden, I am beyond excited to transplant my seedlings outdoors, and let that space teach me whatever will come from digging in the dirt in hopes of a harvest. Looking forward to inviting the kids into nurturing these baby plants alongside me. 

Here's to (slow) growth.


Revisiting April goals

Read Everything Beautiful in its Time  Picked up a new slogan here when life gets in the way-- "Happy days!"
Finish reading A Shepherds Look at Psalm 23
Book flights for early summer trip
Clean out coat closet  que the music.. "so fresh and so clean, clean"
Hunker down on bedtime routine for J (grace not perfection!...still going for it)

Coconut Chocolate Chip Cookies

Hi my names Courtney and I have an addiction to cookie dough. It all started as a kid when my mom let me lick the batter off the beaters and here I am now doing the same with my own kids. We'll chalk it up as part of our family legacy. Pretty solid legacy if you ask me. 

My true indicator if a cookie will be good is if the dough is good. And let me tell you how insanely scrumptious this cookie dough is!! Like you'll never guess this dough does not have butter in it. Instead it's made with coconut oil and if I am honest.. it's the bomb.com. I love you butter but you're not needed here. So yes go ahead and trick your mind into thinking these butter-less cookies are a better for you and eat another 3 cookies in one sitting. I am right there with ya. :)

Not a coconut fan? Omit the shredded coconut! Still just as yummy with only a subtle sweet flavor from the coconut oil. And if you are a coconut fan buckle up for you are going to travel in your dreams to a tropical oasis as you bit into these gooey treats.



coconut chocolate chip cookies
1/2 cup coconut oil
1 cup brown sugar, packed
2 eggs at room temperature 
1 tbsp pure vanilla extract
1 3/4 cup all purpose flour
1/2 tsp salt
1 tsp baking powder
1/4 tsp baking soda
1.5 cups semisweet chocolate chips 
1.5-2 cups shredded coconut (optional)

1.  Preheat oven to 375 degrees 
 
2.  In a mixing bowl, use a mixer to beat the the coconut oil and brown sugar.  Add in the eggs and beat until fluffy.  Add in the vanilla extract. 
 
3.  Add in the flour, baking soda, salt and baking powder  in small increments until all the flour is incorporated.  Add in the chocolate chips + shredded coconut and mix well.  
 
4.  Drop by small rounded spoons onto prepared baking sheets. Bake for about 8 – 9 minutes or until slightly browned around the edges. Let them rest on the cookie sheet for a few minutes before removing to rack to cool completely.

Celebrating Mother's Day

Good gravy its almost time to celebrate the women in our lives who are champions of the mundane: our moms. It took becoming a mom to realize this, and every mama's day from here on out I think I will become more appreciative of my mom and the women who show up daily to pour themselves out. Because this job is not for the faint of heart. This job is a daily work of planting seeds in hopes that the ones in our care will know their worth and love the next generation well. 

Typically we celebrate by sleeping in (amennnnn), having brunch (egg casserole and cinnamon rolls, please!) and spending some time outdoors visiting our mamas. Fingers crossed the weather is warm so we can be lazy all day lounging on the patio. 

Of course it wouldn't be Mother's day without a thoughtful gift or a shower of kind words to show them how much we see them and adore them!


one I have heart eyes all over this journal! It is simple and has designated space to be whatever you want it to be. I personally love that it has a reading checklist and dotted pages. two This rubber tree plant is easy-peasy to care that anyone could enjoy it without worrying how to keep it alive. three Now that I am adulting and such I see the need for practical outdoor tools like this charming garden set. hint hint, Mark. four Glowing skin in a bottle. My skin has never been healthier and its all thanks to Frank. five summer is coming and what better gift then protecting your skin while looking classy doing so. 

Last year in lieu of gifts my siblings and I created a music video (<-- click there) to the song "Perfect Fan" by BSB. I could count the number of times on my hand where I've seen my sweet mom cry and during our video was one of them. I will cherish that Mother's day forever.

Q1 Book Review

From February to March I read 2 books instead of 3 since I decided in January to slow down and lean into what I want from this year. My book round-up for 2021 is a wide range of genres (you can find the books I am reading each month here). This quarter I read one book that is a classic Courtney chick-lit whereas the other is work-ethic related. Can you guess which one I really had to really dedicate my time to read? It is fair to say I am not as easily drawn into reading non-fiction. BUT I am so thankful I stuck it out for the breadcrumbs I picked up along the way from Deep Work and also super happy about the time spent lost in another's story from Two Lives of Lydia Bird.

Let's dive in!










The Two Lives of Lydia Bird was nothing short of sad. Um yeah, I really asked myself about 10 times in the beginning of the book "why am I even reading this?!" Pretty funny looking back at it now, but I appreciate the vulnerability of this book. The main character, Lydia, loses the man she's planning on marrying right from the start, and we travel through her grief for the rest of the story. The twist is that she processes her grief through escaping in a certain way that I wont spoil. By the end I felt like a proud sister. Lydia finds meaning to life in a new way and there's some redemption for her in the cheesy way I love reading about in books. 


Favorite quotes: "You don't get over losing someone you love in six months or two years or twenty, but you do have to find a way to carry on living without feeling as if everything that comes afterwards is second best."

Deep Work was a good slow burn for me. I felt like I was back in college reading material that I knew would matter in the long haul but was hard to get into in the meantime. BUT it was worth it. I noticed myself chewing on thoughts throughout my weeks that stemmed from the book's main point: cultivating focused success in a distracted world. Did you catch the counterpoints? Focus and distraction. In today's world it is a foreign concept to not avert our eyes from a singular task. If anything this book has opened my eyes for the need in my own life to cultivate intense focus and retrain my brain from reacting to stimulus that are taking away from my life.
