Easy Summer Meals

The days are getting longer, the weather warmer, and by 5 o'clock each evening I have no desire to cook whatsoever. We've already resorted to breakfast for dinner and fend-for-yourself type meals and summer is just starting... yikes!

Lets be honest this post is mostly for me to remind myself there are some great go-to healthy meals that can be made in a pinch. I will probably rotate in at least 2 of these meals each week to keep us from being tempted by takeout. Hopefully you can find some yummy recipes to add to your summer staples too!


Foil Pack Sausage and Veggies || Chop, pack, and grill. Clean-up is a breeze and dinners done in 30!

Sloppy Joe Stuffed Potatoes || Homemade sloppy joes with a twist. I promise you won't miss the bun! Pro tip: speed up cooking time by air frying your potatoes. 

Mediterranean Quesadilla || This is a fan favorite in our home. So simple and delicious. 

Kale Caesar Salad with Roasted Chickpeas || I never knew I love roasted chickpeas until I had this. Not a fan of kale? Sub it with romaine or spinach. Speed up cooking time by roasting the chickpeas in the air fryer. 

Honey Mustard Salmon || Can be baked or grilled! Serve with a side of asparagus or your fav veggie.

Greek Quinoa Bowls || This recipe has less than 5 ingredients which makes it so simple and refreshing.
